  • pounds potatoes peeled and quartered
  • 3 cups kale stemmed and sliced
  • 2 cloves garlic minced
  • ½ cup almond milk or other plant-based milk
  • 1 tsp fresh dill chopped
  • salt and pepper to taste

Let's Begin!

  • In a large pot, put in the potatoes and enough water to cover the potatoes.
  • Bring the water to a boil, then reduce heat to simmer, covered, until the potatoes are fork-tender.
  • When potatoes are nearly done, in a large skillet cook kale and garlic over medium for 2 to 3 minutes or until kale is wilted, stirring occasionally and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  • Drain and mash potatoes. Gradually stir or beat in enough of the milk to make potatoes light and fluffy.
  • Stir in dill, then fold in the kale mixture. Season with salt and pepper to taste. If desired, top with additional dill.
  • Serve and enjoy with family and friends!
