  • 2 cups ripe bananas mashed
  • ½ cup unsalted butter melted
  • ¾ cup light brown sugar packed
  • ¼ cup maple syrup
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup rolled oats
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¾ tsp kosher salt
  • 1 tsp cinnamon ground
  • ½ cup walnuts toasted, roughly chopped

Let's Begin!

  • Preheat the oven to 350°F. Lightly grease a 9x5-inch loaf pan. Set aside.
  • In a large bowl, stir together the mashed banana, butter, sugar, maple syrup, eggs, and vanilla.
  • Mix the all-purpose flour, whole wheat flour, rolled oats, baking soda, baking powder, salt, cinnamon, and chopped walnuts into the banana mixture.
  • Scrape the bottom and sides of the bowl and mix again to thoroughly combine the ingredients. Be careful not to overmix. Gently pour the batter into the prepared pan.
  • Bake the banana bread for 60 to 70 minutes, until a paring knife or a skewer inserted into the center comes out clean.
  • Remove the bread from the oven. Cool it in the pan for 15 minutes, then loosen the edges, and turn it out of the pan onto a rack to cool completely.
  • Serve warm or at room temperature and enjoy with family and friends!
