Let's gather the ingredients!
- 4 cups broccoli florets cooked/steamed then chopped into small pieces
- ½ cup cheddar cheese shredded
- ¼ cup almond meal
- 2 large eggs beaten
- 1 clove garlic minced
- ½ tsp paprika
- 1 tbsp parsley chopped
- ½ tsp kosher salt
- 1 pinch black pepper ground
- olive oil for cooking
Let's Begin!
In a large bowl, combine the broccoli with all other ingredients. Stir to combine.
Add 1 tbsp of oil to a large pan or skillet over medium-high heat.
Spoon roughly a 1/4 cup of batter into the pan and flatten with the back of the spoon. Cook for 2-3 minutes on each side.
Repeat until the batter is all used. Do not overcrowd the pan. Cook in batches, adding oil in between if necessary.
