  • 4 cups broccoli florets cooked/steamed then chopped into small pieces
  • ½ cup cheddar cheese shredded
  • ¼ cup almond meal
  • 2 large eggs beaten
  • 1 clove garlic minced
  • ½ tsp paprika
  • 1 tbsp parsley chopped
  • ½ tsp kosher salt
  • 1 pinch black pepper ground
  • olive oil for cooking

Let's Begin!

  • In a large bowl, combine the broccoli with all other ingredients. Stir to combine.
  • Add 1 tbsp of oil to a large pan or skillet over medium-high heat.
  • Spoon roughly a 1/4 cup of batter into the pan and flatten with the back of the spoon. Cook for 2-3 minutes on each side.
  • Repeat until the batter is all used. Do not overcrowd the pan. Cook in batches, adding oil in between if necessary.
  • Serve warm, and enjoy with family and friends!
