Fresh Vegetable Spring Rolls

Spring is in the air, and nothing says fresh like a homemade batch of spring rolls. Whether you're new to making spring rolls or an expert chef, these veggie-filled treats are guaranteed to hit the spot - they make an excellent appetizer, snack, lunch box item, or side dish. Spring Rolls

  • 10 rice paper wrappers
  • 5 large romaine lettuce torn in half
  • 2 ounces vermicelli noodles cooked
  • 2 medium carrots cut into 2-3 inch thin matchsticks
  • ½ cucumber cut in 2-3 inch thin matchsticks
  • 1 red pepper cut in 2-3 inch thin matchsticks
  • 14 ounces bean sprouts drained
  • cilantro leaves

Soy Dip

  • ¼ cup rice vinegar
  • ½ cup water
  • ¼ cup light brown sugar
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tsp red pepper flakes
  • 2 tsp cornstarch

Let's Begin!

    Soy Dip

    • In a saucepan, combine the vinegar, water, sugar, garlic, soy sauce, and pepper flakes.
    • Cook over medium heat and stir well to dissolve the sugar. In a small bowl, dissolve the cornstarch with a tablespoon of water.
    • Drizzle the cornstarch mixture into the pan and continue to cook until the sauce thickens and coats the spoon well. Remove from heat.

    Spring Rolls

    • Have all the filling ingredients chopped and ready.
    • Immerse one of the spring roll wrappers in the warm water for about 5 seconds. The wrapper should be soft and pliable. Transfer to a work surface.
    • To the bottom half of the wrapper, stack the filling ingredients. Place a lettuce leaf on the wrapper and stack the on top some of the vermicelli noodles, carrots, cucumber, red pepper, bean sprouts, and a few cilantro leaves.
    • To roll the spring roll, fold in the two sides of the wrapper over the ingredients followed by the end of the wrapper closest to you. Tuck the ingredients in with your fingers to keep the rolls neat and snug. Continue rolling until the spring roll is formed. Continue filling and rolling the remaining spring rolls.
    • Serve with the Soy Dipping Sauce, and enjoy with family and friends!
