  • 2 heads cauliflower
  • 4 tbsp extra virgin olive oil
  • 4 cloves garlic minced
  • ½ tsp kosher salt to taste
  • 1 pinch black pepper to taste
  • cup almond milk unsweetened

Let's Begin!

  • Cut the cauliflower into even florets, then boil them in a large pot filled with boiling water on medium-high heat, until very tender.
  • Remove from heat, then strain the florets. Set aside uncovered to cool slightly.
  • In a small skillet over medium heat, saute the garlic in olive oil for 2-3 minutes or until just slightly browned. Turn off the heat, and set aside.
  • Using a food processor, puree the cooked cauliflower until smooth or a little bit chunky, depending on your preference. Add the almond milk slowly while blending.
  • Transfer the blended cauliflower to a large bowl, then add half of the garlic oil and half of the salt and pepper. Mix until well combined.
  • Taste and adjust seasoning to your preference as needed.
  • Transfer to a bowl or serving platter, then drizzle with more garlic oil. Garnish with chives or other herbs.
  • Serve warm, and enjoy with family and friends!
