Homemade Watermelon Popsicles
Summertime is here, and the sunny days are calling your name! What better way to cool off than with delicious homemade watermelon popsicles? With just a few simple ingredients, you can whip up a batch of these sweet treats that are sure to put a smile on everyone's face. - 19 ounces seedless watermelon cubed
- 5 tbsp granulated sugar divided
- 1 tbsp lemon juice freshly squeezed
- ½ cup coconut milk
- 13 ounces kiwi peeled and cubed
- 1 tbsp mini chocolate chips
Let's Begin!
In a blender, add the watermelon, 2 tbsp sugar, and lemon juice, and blend until well pureed.
Skim off the foam then carefully pour into 10 popsicle molds filling each about 2/3 full.
Sprinkle the chocolate chips over the tops then using a popsicle stick gently push down to immerse the chips. Wipe the sides clean as needed. Cover with the lid and insert popsicle sticks. Freeze for 3 1/2 hours.
During the last 30 minutes of popsicles freezing, whisk together coconut milk with 1 1/2 tbsp sugar until sugar has dissolved, and chill for 30 minutes
Remove the popsicles from the freezer, remove the lid, and carefully pour a scant tablespoon of coconut milk into an even layer over the watermelon layer.
Clean sides as necessary. Return to the freezer, uncovered, and chill for 45 minutes.
Meanwhile, place the kiwi in a blender along with 2 tbsp granulated sugar. Pulse until well pureed. Strain the mixture through a fine mesh strainer into a bowl using a rubber spatula to remove seeds.
Remove popsicles from the freezer and carefully pour about 1 tbsp kiwi mixture over the coconut layer. Return to freezer and chill until popsicles are solid about 2 hours.

To remove popsicles from the molds, turn the tray to the side and run the plastic molds under warm water for several seconds, then slowly pull from the molds.
