  • 4 tbsp jalapeno minced
  • ¼ cup red onion diced
  • tsp chili powder
  • ¼ cup mayonnaise
  • ¼ cup Greek yogurt
  • 1 lime juice and zest
  • ½ cup cotija cheese crumbled
  • 3 tbsp fresh cilantro chopped
  • salt and pepper to taste

  • In a cast iron skillet, melt the butter over medium-high heat. Add corn, stirring occasionally, until corn is charred, about 5-7 minutes.
  • Add jalapeño, red onion, and chili powder and stir to combine. Reduce heat to medium-low, then stir in mayonnaise, yogurt, lime juice, lime zest, and cotija cheese, until cheese is melted and corn is evenly coated.
  • Remove from heat and stir in cilantro. Season with salt and pepper to taste.
