  • 2 large eggs at room temperature
  • 1 cup pumpkin purée
  • ¾ cup light brown sugar packed
  • ¼ cup vegetable oil
  • 1 tbsp orange zest freshly grated
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp kosher salt
  • ¼ tsp baking soda
  • ½ tsp cinnamon ground
  • ¼ tsp nutmeg ground
  • tsp cloves ground
  • ½ cup walnuts roughly chopped

  • In a small saucepan, bring the apple cider to a boil and cook until reduced to about ¼ cup. Let cool completely.
  • Preheat oven to 350°F. Butter an 8½ x 4½-inch loaf pan with butter.
  • In a medium bowl, whisk the eggs, pumpkin purée, light brown sugar, vegetable oil, orange zest, and reduced cider until combined.
  • Sift in the flour, baking powder, salt, baking soda, cinnamon, nutmeg, and cloves, then mix just until incorporated. Fold in the walnuts. Scrape batter into prepared pan, then smooth the top.
  • Bake the bread for 55–65 minutes or until risen and a tester poked in the middle comes out clean. Transfer the pan to a wire rack and let the bread cool in the pan.
  • Serve warm or at room temperature and enjoy with family and friends!
