- 2 large portobello mushrooms sliced
- 1 tsp olive oil
- 2 cloves garlic minced
- ½ tsp thyme dried
- 1 tbsp soy sauce
- ½ cup almond milk or any other non-dairy milk
- pinch salt and pepper to taste
- 4 slices sourdough toasted
- 2 tbsp parsley finely chopped

In a skillet over medium heat, Saute the garlic and thyme in the olive oil until the garlic has lightly browned.
Add the mushrooms then season with salt and pepper. Saute until the mushroom starts to brown.
