  • 2 large portobello mushrooms sliced
  • 1 tsp olive oil
  • 2 cloves garlic minced
  • ½ tsp thyme dried
  • 1 tbsp soy sauce
  • ½ cup almond milk or any other non-dairy milk
  • pinch salt and pepper to taste
  • 4 slices sourdough toasted
  • 2 tbsp parsley finely chopped

Let's Begin!

  • In a skillet over medium heat, Saute the garlic and thyme in the olive oil until the garlic has lightly browned.
  • Add the mushrooms then season with salt and pepper. Saute until the mushroom starts to brown.
  • Turn the heat to low, then add the soy sauce and almond milk to deglaze the pan. Adjust the seasoning to taste.
  • Spoon the mushroom mixture over the slices of toasted sourdough bread.
  • Sprinkle with parsley, and if preferred, add grated vegan parmesan.
  • Serve warm, and enjoy with family and friends!
