- ¾ cup pistachios lightly toasted
- 1 tbsp sesame seeds
- ¼ cup slivered almonds lightly toasted
- ½ cup dried apricots chopped
- ¼ cup tahini
- ¼ tsp kosher salt
- 2 Medjool dates pitted
Let's Begin!
In a food processor, pulse the toasted pistachios until coarsely chopped. Transfer ¼ cup to a small bowl and mix in sesame seeds. Set aside.
Add the remaining ingredients to the food processor and pulse until finely ground. The mixture should stick together when pressed between fingers.
Firmly roll into 1-inch balls, then coat in pistachio-sesame mixture. Refrigerate for at least 2 hours.
