Tacos

  • 1 large cauliflower cut into small florets
  • 1 tbsp taco seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 1 lime juice and zest
  • 4 flour tortillas or whole wheat
  • 1 sprig cilantro
  • ¼ purple cabbage shredded
  • 4 radishes sliced

Crema

  • 1 avocado
  • 1 clove garlic minced
  • ½ cup vegan sour cream
  • ½ tsp kosher salt
  • ¼ cup lime juice
  • ¼ cup cilantro

Instructions
 

Let's Begin!

  • Preheat oven to 400°F.
  • In a large bowl, toss the cauliflower with taco seasoning, smoked paprika, garlic powder, olive oil, lime juice, and zest.
  • Spread out the cauliflower on a large baking sheet.
  • Bake for 30 minutes or until cauliflower is tender with crispy edges.
  • While the cauliflower is roasting, prepare the avocado crema by placing all ingredients in a food processor or small blender and blending until smooth.
  • When the cauliflower are done, warm the tortillas, then add the roasted cauliflower along with shredded cabbage, radishes, and fresh cilantro. Top with avocado crema.
  • Serve warm and enjoy with family and friends!
