  • 2 tbsp vegan butter melted
  • 3 tbsp balsamic vinegar
  • 2 tbsp soy sauce
  • 4 cloves garlic minced
  • ½ tsp parsley chopped
  • ½ tsp thyme
  • 1 tsp brown sugar
  • Pinch kosher salt and black pepper to taste

Let's Begin!

  • Preheat oven to 400°F. Lightly grease a large baking sheet with oil.
  • In a large bowl, combine the mushrooms with the melted vegan butter, balsamic vinegar, soy sauce, garlic, parsley, thyme, brown sugar, salt and pepper. Toss to evenly coat.
  • Arrange mushrooms in a single layer on a prepared baking sheet.
  • Roast in the preheated oven for 15-20 minutes, mixing them halfway through cooking, until tender.
