- 2 large eggplants sliced lengthwise
- 1 pinch kosher salt or to taste
- 4 tbsp olive oil
- 1 cup cottage cheese
- 1 sprig cilantro chopped
- ⅓ cup walnuts chopped
- 2 cloves garlic minced
- 2 tbsp sour cream
