  • 2 large eggplants sliced lengthwise
  • 1 pinch kosher salt or to taste
  • 4 tbsp olive oil
  • 1 cup cottage cheese
  • 1 sprig cilantro chopped
  • cup walnuts chopped
  • 2 cloves garlic minced
  • 2 tbsp sour cream

Instructions
 

Let's Begin!

  • Sprinkle the eggplant slices with salt and leave to stand for 5 minutes then dab dry with paper towels.
  • Fry the eggplant slices in a pan with oil for a few minutes on each side, until tender and soft. then, place eggplant slices on paper towels to remove excess grease.
  • Toss cottage cheese with chopped cilantro, chopped nuts, and garlic in a bowl then mix with sour cream and season with salt.
  • Place the cheese filling on each eggplant slice and wrap them into a tight roll.
  • Serve and enjoy with family and friends!

Notes

 
As an alternative to frying in a pan, the eggplants can also be baked in the oven or on the grill.
