Crepe

  • cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tbsp granulated sugar
  • ¼ tsp kosher salt
  • 2 tbsp vegan butter melted, plus more for cooking
  • 1 cup soy milk unsweetened
  • 1 cup sparkling water or regular water

For serving

  • powdered sugar
  • vegan whipped cream
  • fresh berries

Instructions
 

Let's Begin!

  • In a large bowl, sift together the flour and cornstarch, then add the sugar, salt, vegan butter, soy milk, and sparkling water. Whisk well until smooth and well combined. Be careful not to over-mix the batter.
  • Heat a medium-sized, non-stick pan to medium heat. Once hot, add a tablespoon of vegan butter to the pan. Once melted, add about 1/3 cup of the batter to the pan.
  • Immediately pick up the pan and rotate it to move the batter into a thin circle.
  • Cook until the top looks fairly dry, about 2 minutes. Using a spatula, carefully flip the crepe over and cook for 30 seconds on the other side. Remove from pan and repeat with the rest of the batter.
  • Serve with a dusting of powdered sugar and top with vegan whipped cream and fresh berries.
  • Enjoy with family and friends!
