Marinated Watermelon

  • 1 small watermelon sliced into 1-inch cubes
  • 6 tbsp soy sauce
  • 2 tsp rice vinegar
  • 1 tbsp sesame oil
  • ½ lime juiced
  • 1 tbsp agave nectar
  • 2 scallions minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp white sesame seeds toasted

Poke Bowl

  • 4 servings cooked white rice
  • 1 medium cucumber sliced
  • 1 large avocado pitted and sliced
  • ¼ cup pickled ginger
  • ¼ cup bean sprouts cooked
  • 1 tbsp black sesame

Let's Begin!

  • In a large bowl, combine the soy sauce, rice vinegar, sesame oil, lime juice, agave, scallions, ginger, and white sesame seeds. Mix well.
  • Add the watermelon cubes in the marinade and stir. Cover the bowl with plastic wrap and let marinate in the fridge for 1 hour.
  • To assemble the poke bowls, start with rice as a base and top with cucumbers, avocado, pickled ginger, and bean sprouts.
  • Add a scoop of the marinated watermelon and use the marinade as a dressing to drizzle over the bowl.
