Serving Suggestions

Here are some helpful and delicious serving suggestions for Vegan French Onion Soup:

Crispy Vegan Croutons

Make some homemade vegan croutons by cutting bread into small cubes and toasting them in the oven with olive oil, salt, and herbs. Serve the soup with a handful of these crispy croutons on top for added texture.

Vegan Cheese Toast

Instead of broiling the cheese on top of the soup, make some vegan cheese toast on the side. Slice a baguette and top each slice with vegan cheese. Toast in the oven until the cheese is melted and slightly golden. Serve the cheesy toast alongside the soup.

Herb Garnish

Sprinkle some fresh herbs such as chopped parsley, thyme, or chives on top of the soup before serving. This will add a pop of color and freshness to the dish.

Pair with a Salad

Serve the Vegan French Onion Soup first or alongside a fresh green salad. The crisp and refreshing salad will complement the rich and savory flavors of the soup.

Vegan Grilled Cheese Sandwich

Take your soup to the next level by serving it with a warm and gooey vegan grilled cheese sandwich. Use your favorite vegan cheese and bread, and grill until the cheese is melty and the bread is crispy.

Add a Dash of Balsamic Glaze

Drizzle some balsamic glaze on top of the soup just before serving. The sweet and tangy flavor of the balsamic glaze will enhance the overall taste of the soup.

Remember, these are just suggestions, and you can get as creative as you want when serving Vegan French Onion Soup. Enjoy!

Let’s gather the ingredients!

  • 5 cups water divided
  • 2 tbsp extra virgin olive oil
  • 2 large yellow onions thinly sliced
  • 4 small red onions thinly sliced
  • pinch salt and black pepper to taste
  • ½ cup dry red wine optional
  • 3 sprigs thyme fresh
  • 4 cloves garlic finely chopped
  • 2 bay leaves
  • ½ cup brown lentils
  • ½ baguette sliced
  • 6 slices vegan cheese such as provolone or Gruyere
  • 2 tbsp parsley fresh, chopped

Instructions

Let’s Begin!

  • In a large Dutch oven over medium-high heat, heat the olive oil. Add onions, season with salt and pepper, and toss to coat in the oil.
  • Cook the onions until they are golden brown and very tender.
  • Stir in 1 cup water, wine, thyme, garlic, and bay leaves to the pot. Bring to a simmer and cook, stirring occasionally for 5 minutes.
  • Add the remaining 4 cups of water and lentils and bring up to a boil.
  • Reduce heat to low and simmer, skimming foam from the surface and stirring occasionally, until lentils are tender, for 30 to 35 minutes.
  • When the lentils are tender, remove the pot from heat and preheat the broiler to high.
  • Top the soup with baguette slices, then top the baguette with cheese. Place pot in oven and broil until cheese is melty, 2 to 5 minutes depending on your broiler and cheese. Top with chopped parsley.
