  • 2 tsp extra virgin olive oil plus more to drizzle
  • ½ tsp paprika
  • 1 avocado
  • 1 tbsp lemon juice
  • 2 slices sourdough bread 1-inch thick
  • pinch salt and pepper to taste

Let's Begin!

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • In a bowl, toss the chickpeas with olive oil, paprika, salt, and pepper.
  • Bake the chickpeas in the oven for 5-10 minutes or until lightly brown and sizzling.
  • In another bowl, mash the avocados with lemon juice, salt, and pepper.
  • Heat a cast-iron grill pan. Brush the bread with olive oil and grill over high heat, turning once, until toasted.
  • Scoop the mashed avocados onto the toast, then top with roasted chickpeas.
  • Garnish with olive oil, salt, pepper, and herbs.
