Ingredients

  • 2 heads cauliflower
  • 4 tbsp extra virgin olive oil
  • 4 cloves garlic minced
  • ½ tsp kosher salt to taste
  • 1 pinch black pepper to taste
  • cup almond milk unsweetened

Instructions

  • Using a food processor, puree the cooked cauliflower until smooth or a little bit chunky, depending on your preference. Add the almond milk slowly while blending.
  • Transfer the blended cauliflower to a large bowl, then add half of the garlic oil and half of the salt and pepper. Mix until well combined.
  • Taste and adjust seasoning to your preference as needed.
