Russet potatoes

I suggest using fresh for freshness rather than using frozen and thawed potatoes. You can also use sweet potatoes and or feel free to substitute pumpkin or butternut squash.

 
Cashews

To add a nutty texture to this recipe they are soaked in hot water before using in this recipe.

Almond milk

I prefer to use my favorite unsweetened plant-based milk for this recipe.

Cornstarch

Use to thicken the mixture and make sure they are measured correctly.

Vegan Butter

It’s either homemade or store-bought. If you are using a store-bought they are entirely plant-based.

Garlic and chives

They add an earthy flavor that you can’t resist tasting, so don’t skip these two ingredients.

Salt and Pepper

They balance the earthy flavors and adjust to taste if needed.

Vegan Sauce

Drizzle with creamy or cheesy flavor if desired this is optional but a great addition. It’s either vegan sauce or vegan gravy and it’s homemade or store-bought.

Vegan Duchess Potatoes

This healthy version of baked Vegan Duchess Potatoes is the perfect appetizer and snack! It is made with mashed potatoes, creamed cashews, and chopped leafy greens with a great addition of creamy vegan gravy or vegan sauce.

Ingredients
  

Let’s gather the ingredients!

  • 5 cups russet potatoes peeled and chopped
  • ½ cup almond milk
  • cups raw cashews soaked in hot water
  • tbsp vegan butter divided
  • tsp cornstarch
  • 5 tbsp chives finely chopped
  • 2 cloves garlic minced
  • pinch kosher salt to taste
  • pinch ground black pepper to taste

Instructions
 

Let’s Begin!

  • Preheat oven to 400°F.
  • Over medium-high heat, in a pot with water, boil the chopped potatoes for 8 minutes or until tender.
  • Meanwhile, using a blender, cream the cashew, almond milk, and cornstarch. Set them aside.
  • Over medium-high heat, in a skillet with vegan butter, saute the garlic for 2 minutes or until golden brown.
  • In a blender, combine the boiled potatoes, creamed cashews, sauteed garlic, half of the chives, and season with kosher salt and black pepper. Mash them until creamy.
  • Transfer the mixture into a piping bag with a tip-off and pipe them into swirls into a baking tray.
  • Brush each swirl potato with melted vegan butter and bake for 45 minutes or until slightly brown.
  • Garnished with remaining chive and black pepper. and drizzle with vegan gravy or sauce, if desired.
  • Serve and enjoy with family and friends!
